Join Mimi and her family for an authentic Oaxacan cooking experience at Maíz Cocina Tradicional, our family restaurant located in the Etla Valley, about 40 minutes from Oaxaca City.

During this experience, you’ll step into our kitchen and discover traditional Oaxacan cooking through recipes and techniques passed down through our family for generations.

Together, we’ll prepare two traditional Oaxacan dishes, including mole, make tortillas by hand using nixtamalized corn, and share everything we cook around the table.

This is more than a cooking class. It is an opportunity to experience Oaxaca through its food, its traditions and the people who keep them alive.
